- 3 large leeks
- 1 medium onion
- 3 medium potatoes
- 900ml(11/2 pints) stock
- 300ml (1/2 pint) milk
- 1oz butter
- Wash and peel leeks and potatoes.
- Chop vegetables finely.
- Melt butter and gently fry vegetables until slightly soft.
- Add stock and milk and heat until boiling.
- Turn down heat and cook gently for 30 mins.
- Season and serve.
Carrots, swede, cabbage, onions, garlic or peppers could also be used.
