Ingredients

  • 3 large leeks
  • 1 medium onion
  • 3 medium potatoes
  • 900ml(11/2 pints) stock
  • 300ml (1/2 pint) milk
  • 1oz butter
  • Seasoning

Method

  1. Wash and peel leeks and potatoes.
  2. Chop vegetables finely.
  3. Melt butter and gently fry vegetables until slightly soft.
  4. Add stock and milk and heat until boiling.
  5. Turn down heat and cook gently for 30 mins.
  6. Season and serve.

Carrots, swede, cabbage, onions, garlic or peppers could also be used.
